Interview with Karen Adler who owns the website PigOutPublications.com. Karen is the BBQ Queen of Kansas City. She got the title after being challenged by a DJ in Kansas City. He was saying that women couldn’t BBQ. Of course, he was wrong. So no Karen Adler and her partner Judith Fertig travel the country teaching and speaking on BBQ. Of course they BBQ all the way around the country also.

25 Essential Techniques for Grilling Fish (by Adler and Fertig) $12.95 hc spiral interior (with color photos) This book teaches all of the basics for perfectly grilled fish or seafood – every time. This is no fish tale!
1. Select the freshest fish always. The flesh should spring back when lightly indented with your thumb. Eyes should be clear. There should be no fishy smell – just a clean saltwater smell.
2. Marinate for only 30 minutes max or the fish will get mushy.
3. Grill for 10 minutes per inch of thickness, turning only once.

We demystify how to plank. It is really quite simple and there are several different ways to attack the plank.
1. Torch it – this it what guys like to do.
2. Indirect – the food sits atop the fragrant wood plank and cooks slowly – indirectly – and the food absorbs the lovely wood flavor
3.Smoke Planking – adding wood to the fire to get twice as much wood flavor – from the plank and also from the wood smoke.
4. Oven Planking – so if you don’t have a grill – you can still plank indoors in your oven – with excellent result

Thanks to Karen for our wonderful interview. We’ve had several wonderful events in Kansas City to promote our new books. Thursday at Webster House included our Plank-Roasted Beef Tenderloin with Brandy Butter Sauce, Aussie Grilled Shrimp on the Barbie and Blistered Bananas with Puerto Rican Rum Sauce. Friday night was a BBQ bash at Smoke N Fire with our presentaion of Planked Brie with Apricot Amaretto Chutney… everything got gobbled up. YUM!
